Oatmeal Chocolate Chip Muffins

Ingredients:
*3/4 cup milk
*1/2 cup vegetable oil
*1 egg
*1 cup all-purpose or whole wheat flour (I do half and half)
*1 cup oatmeal (You can omit the oatmeal and add another cup of flour in place of it)
*1/3 cup sugar
*3 teaspoons baking powder
*1 teaspoon salt
*1 cup chocolate chips

Directions:
Heat oven to 400 degrees.
Grease muffin pan or line with baking cups.
Beat milk, oil, egg and chocolate chips together.
Stir in flour, sugar, baking powder and salt, all at once, just until flour is moistened (batter will be lumpy).
Fill muffin cups with batter
Bake until golden brown, 18-20 minutes.
Yields 1 dozen muffins

Baking

Today while Mommy, Bethany and David were in Topeka, Amy, Ellia and I baked some cookies. Then we had pancakes. We first made Wheat Chocolate Chip Cookies then we made Chocolate Chip Cookies. William Carey: Missionary to India

In England, on August 17, 1761 William Carey was born. Carey was converted at the age of 18. At the age of 25 he was appointed a minister. Even though he was very busy he still had time to learn five languages: Latin, Greek, Hebrew, Dutch, French, and English. June 10, 1781 he married Dorothy Plackett. Only 3 of their 6 children lived past the age of 5. Many people did not agree with him about missions one time one man said, “Young man, sit down! When God pleases to convert the heathen, he will do it without your help or mine!” Carey organized a missions society. At it’s first meeting he preached a sermon – ‘Expect great things from God. Attempt great things for God’. On April 1793 he arrived in India. In December 1807 Dorothy died. In 1812 a fire destroyed the printing press. At the age of 73 William died. He had spent 41 years in India without returning home. As he died he said to a missionary, “Dr. Duff! You have been speaking about Dr. Carey; when I am gone, say nothing about Dr. Carey – speak about Dr. Carey’s God.” :

It Couldn't Be Done

Somebody said that it couldn't be done,
But he with a chuckle replied
That "maybe it couldn't," but he would be one
Who wouldn't say so till he'd tried.
So he buckled right in with the trace of a grin
On his face. If he worried he hid it.
He started to sing as he tackled the thing
That couldn't be done, and he did it.


 
Somebody scoffed: "Oh, you'll never do that;
At least no one ever has done it";
But he took off his coat and he took off his hat,
And the first thing we knew he'd begun it.
With a lift of his chin and a bit of a grin,
Without any doubting or quiddit,
He started to sing as he tackled the thing
That couldn't be done, and he did ti.



There are thousands to tell you it cannot be done,
There are thousands to prophesy failure;
There are thousands to point out to you one by one,
The dangers that wait to assail you.
But just buckle in with a bit of a grin,
Just take off your coat and go to it;
Just start to sing as you tackle the thing
That "cannot be done," and you'll do it.

Happy Birthday Amy!! I pray that today was a very special day. Thanks for being such a great sis. Thank you also for being such an example for me in our Saviour. It is very encouraging to read your blog posts, read your newsletter, seeing you grow in Christ, etc... I love you lots. I am soooo glad you are my big sister.
