Blogging Break



I am going to be taking a little break from this blog of mine...until the New Year. I have enjoyed posting on here and reading all your comments. Your comments always brightened my day :) But I have felt that it is time to take a little break from blogging. I hope that when I come back in 2013 I can make this something more...such as, verses to encourage you, book reviews, recipes, tutorials, devotionals, life, etc... Do you have anything you would like to see more of? If so, please comment and tell me or vote on the poll.

I cut out hands from brown paper and then taped them together but you can also punch holes and string them up.

Apple Muffin Recipe

These are REALLY delicious muffins. 

Ingredients
*3 medium granny smith apples -- peeled, cored and diced
*1 cup sugar
*1/2 cup canola/vegetable oil
*2 1/4 cups flour
*1 tbsp baking powder
*1/2 tsp salt
*1/4 tsp ground cinnamon
*1/4 tsp grated nutmeg
*1/2 cup milk
*1 large egg at room temperature

Directions
*Preheat the oven to 400 degrees Fahrenheit and grease muffin pan. 
*Toss the diced apples and sugar into a medium bowl. Pour the oil over the top and stir well. Set aside at room temperature (The recipe says for 45 minutes but that is not really necessary. I let them sit for about 25 minutes and the muffins turned out fine. You need to let them sit long enough to let the mixture turn really juicy and watery)
*Whisk flour, baking powder, salt, cinnamon and nutmeg in a second medium bowl. Set aside. 
*Stir the milk and egg into the apple mixture until smooth. Then stir in the flour mixture until moistened (do NOT stir until the batter is completely smooth or else you will have tunnels in your muffins. The batter should be lumpy). 
*Bake the muffins for 23-25 minutes or until muffins have rounded, slightly cracked tops.

I added a crumb topping. Below is the recipe.

Ingredients
*2 TBSP butter, melted and cooled
*2 TBSP packed brown sugar
*1/4 cup uncooked oatmeal
*4 tsp flour

Directions
*Stir together butter and sugar until blended (there will be some lumps).
*Then stir in oatmeal and flour until it crumbles between your fingers (you may have to add more flour so that it crumbles between your fingers).
*Put on top of muffins BEFORE you bake the muffins and gently push it in just a little bit (that way it doesn't fall off).

I baked the muffins and then let them cool and then put them in a bag. We ate the muffins the next morning and they were still very moist and tasty. They stay good in the freezer up to 48 hours.

Cream Cheese Swirl Brownie Recipe



Ingredients
For the brownie
*1 package brownie mix (18.3 oz)
*1/4 cup water
*1/2 cup vegetable oil
*2 large eggs
For the cream cheese swirl
*6 oz cream cheese, softened
*5 tbsp butter, softened
*1/3 cup sugar
*2 large eggs
*2 tbsp flour
*3/4 tsp vanilla extract

Directions
*Preheat oven to 350 F
*Prepare the brownie mix according to box and pour half of the batter into greased 13" x 9" pan.
*Beat together all ingredients for cream cheese swirl and pour evenly over brownie batter in pan.
*Pour the remaining brownie batter on top. Take a knife and run it through the batter mixing together the brownie batter and cream cheese swirl until they swirl together.
*Put in oven for 30 minutes (The recipe says 24-26 minutes but when I put it in for that long they weren't near down. I put them back in for a while but I didn't time it. I just checked the brownies every so often. To know when the brownies should be done the edges are done quite a bit (not burnt though) and the middle should be clean when a toothpick is inserted).
